Freshly Foraged Ramps for Pesto, Korean Pancakes, and Stir-Fry.

My body does best when I eat leafy greens on the daily - which has been quite a challenge in these days of lockdown.  Ramps are my savior at the moment – There is a hillside COVERED with them on the trail down to the river in front of our house –  I make tons of Vegan Ramp Pesto for the freezer to toss with pasta, spread on toast, add to bruschetta. . .

We eat fresh Ramps in Korean pancakes, and stir-fry.  This year we have had a really slow spring (which I LOVE) so our Ramp season lasted a little longer than the usual 10 days.  

Ramps and my particular harvesting spot is just one more blessing about living in our little slice of heaven.

Are you a plant-based eater too?

Here is my recipe:

Vegan Ramp Pesto

1c. Olive Oil

1c. Water

2c. roasted and salted sunflower seeds

4c. Freshly washed in cold water ramps

Blend on high until smooth – add a little extra salt to taste if needed.

(If I had a food processor I would use it for this recipe.)
